Beer of the Month: Stay Classy
We’ve brewed enough IPAs over the years to know our way around a recipe, but this one hits different.
Meet Stay Classy, our very first Cali IPA. A little West Coast inspiration, a lot of attitude, and a name that felt appropriate - if you know, you know.
Born from the classic, pine-forward beers of the Pacific Northwest, Stay Classy strips back the malt weight and lets the ingredients do the talking. The malt stays light and crisp, while a seriously generous hop bill takes care of the rest.
Keeping It Cool
Here’s where things get interesting. We cold-fermented Stay Classy with an ale yeast. Dropping the temperature keeps the yeast character incredibly clean, leaving us with a crisp base that puts the focus firmly on the hops.
Take away a lot of the malt weight and suddenly every hop has nowhere to hide. You can really start to pull apart what each variety is bringing to the beer.
Naturally, we threw five of them at it.
INSIDE THE HOP BILL
Nelson, Simcoe, Columbus, Nectaron, and Citra all made it into the tank.
Nelson and Nectaron bring bright tropical character and stone fruit up front, while Citra pushes punchy citrus through the mid-palate.
Simcoe delivers that unmistakable piney resin, while Columbus brings a satisfying dank edge to the finish.
It’s a massive hop bill, but against such a clean, stripped-back base, every variety gets its moment in the glass.
Clean, Crisp, Fiercely Hoppy
Stay Classy packs a serious punch, but it doesn’t drink heavy. It’s clean and ultra-refreshing, delivering exactly what we wanted from our first Cali IPA.
Our first Cali IPA has officially left the brewhouse, and it’s taking the spotlight as our Beer of the Month.
